Second-year students in the Culinary Management program at Western Technical College will be taking over the cafeteria, the TC Café, on Tuesday and Wednesday, Oct. 14-15, from 7:00 a.m.-12:30 p.m. each day. As part of their hands-on training, students in the Culinary Management program work for several weeks developing themes, standardizing recipes, making grocery lists, setting up staffing charts, and working on marketing plans for the event.

On Tuesday, the students have planned a Tex Mex menu. For breakfast they will serve corn cakes with two eggs and two sausages, and a chorizo and cheddar omelet with hash browns and toast. Lunch items include chicken tortilla soup, Mexican stuffed shells over rice, build-your-own fajita, BBQ pork loin sandwich, Rodeo burger with steak fries, and fried ice cream.

On Wednesday, the students are featuring “Vote 2008 – Celebrating Diversity” specials. The All American Big Breakfast consists of grilled ham steak, hash browns, two eggs, and two pieces of toast. Lunch menu items include Wisconsin Beer Cheese soup, Chicago-style hot dogs, brats with kraut and German potato salad, Chinatown stir fry with egg roll and white rice, Philly cheese steak on a hoagie with steak fries, Mom’s hot caramel apple pie with ice cream, and red, white and blue strawberry shortcake.

The second-year Culinary Management students coordinate everything for this event except the food production. The Food Production Specialists students take care of preparing the food under the supervision of a Culinary Management student manager.

Western’s TC Café is located on the first floor of the Kumm Center, 400 6th St. N., on Western’s La Crosse Campus. The Café is open to the general public.
