WWTC students take over the cafeteria

Second-year students in the Culinary Management program at Western Wisconsin Technical College will be taking over the WWTC Cafeteria Tuesday-Thursday, Oct 18-20. As part of their hands-on training, students in the Culinary Management program work for several weeks developing themes, standardizing recipes, making grocery lists, setting up staffing charts, and working on marketing plans for the event.
On Tuesday, the students have planned a Texas Barbecue. Menu items for the day include: BBQ Chicken Quarters, Pulled Pork Sandwich, and Slow Roasted Beef Brisket. All entrees are served with Western Baked Beans, Corn on the Cob, and Garlic Mashed Potatoes. Other options include Chili Bar, Corn Bread, BBQ Bacon Cheddar Burger, Western Omelet with Hashbrowns, and Peach Cobbler or Pecan Pie for dessert.
On Wednesday, the students are hosting “Mardi Gras” to support the victims of Hurricane Katrina. They will be selling Mardi Gras Beads and donating the proceeds to the Katrina Relief Fund. The menu will include: Pan Fried Catfish Fillet, Beef Po’boy Sandwich, Chicken Etouffee over Rice, Shrimp and Andouille Sausage Gumbo, Mini Baguettes, Beignets, Cajun Grilled Chicken Breast on French Roll with Hush Puppies and Remoulade Sauce, and Fat Tuesday Andouille Sausage Omelet with Hashbrowns. Dessert is your choice of Bananas Foster or Crème Brulee.
Thursday is Casino Day with the following menu: Poor Man’s Lobster, Prime Rib Sandwich Au Jus, Chicken Cordon Blue, Pedro’s Oven Roasted Baby Red, French Onion Soup, Batter Fried Shrimp Basket, Build Your Own Omelet with Hashbrowns, and Cheesecake on a Stick or Russian Cream for dessert.
The second-year Culinary Management students coordinate everything for this event except the food production. The Food Production Specialists students take care of preparing the food under the supervision of a Culinary Management student manager.
The WWTC Cafeteria is located on the first floor of the Kumm Center, 400 6th St. N., on the WWTC La Crosse Campus. The cafeteria is always open to the general public.
