Western students take over the cafeteria

LA CROSSE, Wis. – Second-year students in the Culinary Management program at Western Technical College will be taking over the Western Cafeteria Tuesday-Thursday, Oct 16-18, from 7:00 a.m.-12:30 p.m. each day. As part of their hands-on training, students in the Culinary Management program work for several weeks developing themes, standardizing recipes, making grocery lists, setting up staffing charts, and working on marketing plans for the event.
On Tuesday, the students have planned a Big City Living menu. They will serve Denver Omelet with Hash browns and Toast, Manhattan Clam Chowder in a Bread Bowl, Chinatown Broccoli Cashew Stir Fry, Little Italy Stromboli with Marinara Sauce, Chicago Hot Dog Vendor, New York Deli Corn Beef and Swiss on Rye with Sweet Potato Fries, Boston Cream Pie, and New York Cheesecake with Cherries Jubilee Sauce.
On Wednesday, the students are giving you a taste of the tropics with their Caribbean Vacation menu. The menu will include: Breakfast Island Wrap, Bahamian Pepper Pot Soup, Puerto Rican Pull Pork Sandwich with Fries, Jamaican Jambalaya with Pasta and Corn Muffin, Caribbean Chicken Salad with Muffin, Cayman Island Kabobs with Mango Chutney with Black Beans and Rice, Cuban Coffee Brownies, and Grilled Banana Split with Almonds and Coconut.
Thursday is a Halloween Party with the following menu: Filled Croissant with Hashbrowns, Bat (chicken) Wings with Swamp Dip and Hoppin’ John Rice, Worms with Eyeballs (Spaghetti with Meatballs) and Garlic Cheese Bread, Ham Loaves with Baked Potato, “Rat”atouille (Eggplant, tomatoes, onions, bell peppers, garlic and herbs in olive oil), Chili in a Bread Bowl with assorted toppings, Dracula’s Blood-Stained Burger (1/4# burger with bacon, pepper jack cheese, fried onions and BBQ sauce)with Fries and Beverage, Witch’s Brew, Caramel Apple Cupcakes, and Dirt Cake.
The second-year Culinary Management students coordinate everything for this event except the food production. The Food Production Specialists students take care of preparing the food under the supervision of a Culinary Management student manager.
The Western Cafeteria is located on the first floor of the Kumm Center, 400 6th St. N., on Western’s La Crosse Campus. The cafeteria is always open to the general public.
